This Merdeka season, Alila Bangsar invites guests to reconnect with the heart of Malaysian cuisine through Living Heritage, a dining experience that celebrates the stories, ingredients and traditions that have shaped the nation’s culinary identity at Botanica + Co, Alila Bangsar.
Inspired by the overwhelming response to the hotel’s Warisan Zaman Berzaman buffet earlier this year, Living Heritage brings back many of the guests’ favourite dishes. From cherished family recipes and time-honoured cooking techniques to ingredients deeply rooted in local culture, this dining experience honours Malaysia’s rich food heritage through a contemporary Alila perspective.
“Food has always been one of the most meaningful ways we celebrate our heritage. Every recipe carries memories, traditions and stories passed down through generations,” said Chef Syahir, Executive Chef at Alila Bangsar. “With Living Heritage, we wanted to preserve those authentic flavours while presenting them with the craftsmanship and attention to detail that define the Alila experience.”
Among the campaign’s highlights is the return of Daging Salai Masak Lemak Pucuk Paku, one of the most requested dishes from the Warisan Zaman Berzaman buffet. Prepared using the traditional salai smoking technique, the beef is slow-smoked over Kayu Rambutan (Rambutan Wood) and Tempurung Kelapa (Coconut Shells), infusing it with a deep, aromatic smokiness before being simmered in a rich turmeric coconut gravy with wild fern. The result is a dish that balances robust flavours with comforting familiarity. Guests can also savour Tenggiri Asam Pedas, where fresh mackerel is gently cooked in a claypot with tamarind, aromatic herbs and spices. The claypot enhances the broth’s depth, creating a harmonious balance of tangy, spicy and savoury flavours that have long been a staple of Malaysian homes. Another signature favourite is the Ayam Bakar Percik, featuring chicken grilled over charcoal and finished with a fragrant coconut-based spice sauce. Smoky notes from the grill complement the richness of coconut milk and the freshness of lemongrass, creating a timeless dish that celebrates traditional grilling techniques.
Midday Tradition Lunch Set Menu(12PM – 3PM)
Perfect for weekday dining, Midday Traditions offers guests a convenient way to enjoy authentic
Malaysian flavours. Available daily for lunch from 12PM to 3PM, diners can choose from Daging Salai
Pucuk Paku, Tenggiri Asam Pedas, Ayam Bakar Percik, Siakap Bakar Sambal Geragau or Cendawan Sambal Gajus (V). Every set is served with steamed white rice, house-made sambal, kerabu mangga and a refreshing Limau Kasturi Cooler, all for MYR 38 nett, offering exceptional value without compromising quality or authenticity.
The Ritual of Minum Petang Tea Time Experience (3PM – 6PM)
The celebration continues into the afternoon with a nostalgic Tea Time experience, available daily from 3PM to 6PM. Inspired by Malaysia’s beloved minum petang tradition, the menu features familiar favourites including Roti Jala with Chicken Curry, Cucur Sayur with Sambal Kicap and Satay Ayam with Peanut Sauce, accompanied by comforting local beverages such as Teh Tarik, Nescafé Tarik and Cendol Pulut. Thoughtfully reimagined with Alila’s signature touch, it offers a refined way to rediscover the comforting flavours of Malaysian teatime.
Evenings Around the Malaysian Table Dinner Experience (6PM – 10PM)
As evening approaches, the celebration continues with Evenings Around the Malaysian Table, a dinner experience inspired by Malaysia’s cherished makan hidang tradition, available daily at Botanica + Co from 6PM to 10PM. Designed for sharing, the menu features a thoughtful selection of starters, salads, signature mains and desserts served family-style.
